Easy Pea-sy Sweet Pea Soup

I've been quiet because we're enjoying this Sweet Pea Soup too much!!  The past week has been non stop action at the store and with cookie popups but we still manage homemade meals, especially because this so easy to make.  Only 2 ingredients; sweet peas and chicken broth.  And you can switch it up with optional mint leaves, lemon juice, salt and pepper, or all at once.  You can also add ham or shredded rotisserie chicken or tofu cubes.

Ingredients
::
Frozen or canned sweet peas
:: Chicken or vegetable broth
Use about 1 cup of frozen sweet peas to 2 cups of broth OR 1 can sweet peas to 1 can broth to start. Add more of one or the other depending on how thick you like your soup.

Sweet peas, chicken broth, lemon juice, salt and pepper is my usual combo but you can add anything that's available in the refrigerator that day.  

Optional add-ons
::
Mint Leaves (it adds a zing!)
:: Lemon juice
:: Salt and Pepper
:: Ham
:: Shredded rotisserie chicken
.. or all of the above :D

Directions
:: In a blender, blend frozen or canned sweet peas with broth until smooth.  If adding mint, include it here.
:: Pour soup into a pot.  Add the optional add-ons here ie squeeze of lemon, salt and pepper, meats.
:: Heat over stove.
:: Serve.

It is a simple way to sooth and hydrate, hydrate, hydrate, and you don’t have to be a master chef to create a warm, simmering broth of goodness. It is inexpensive too, especially when you work with what’s in season. They become ever-changing and never boring.
